1 cup uncooked orzo pasta

2 cups chicken bone broth
1 cup milk
2 cups cubed or shredded pre-cooked rotisserie chicken
2 cups frozen mixed vegetables (a blend of peas, carrots, corn, and green beans works best)
1 teaspoon dried thyme
1/2 teaspoon crushed dried rosemary
1/2 teaspoon paprika
1 pinch poultry seasoning
1 teaspoon salt, plus extra to adjust to taste
1/2 teaspoon ground black pepper, plus extra to adjust to taste
1 sprig fresh thyme (optional, for garnish)
Step-by-Step Directions
Set a large skillet over medium heat, then melt the butter fully. Add the diced onion and sauté for 3 to 4 minutes, until it softens and turns translucent. Stir in the minced garlic and cook for just 30 seconds, until it releases a warm, fragrant aroma.
Add the Dijon mustard and orzo to the skillet. Cook, stirring constantly, until the orzo develops a lightly toasted, nutty exterior. Sprinkle the all-purpose flour over the mixture, and keep stirring for 1 to 2 minutes, until the flour turns pale golden and coats all ingredients evenly.
Slowly pour in the chicken bone broth while whisking continuously to prevent lumps from forming. Add the milk next, then bring the whole mixture to a gentle simmer, at which point the sauce will start to thicken. Fold in the rotisserie chicken, frozen mixed vegetables, dried thyme, crushed rosemary, paprika, and poultry seasoning. Stir to combine, then taste and season with salt and pepper to your preference.
Keep cooking the mixture for 5 to 8 more minutes, stirring occasionally, until the orzo cooks through to a tender bite and the sauce becomes thick and creamy. Top with a sprig of fresh thyme for garnish if you have it on hand, then serve immediately while warm.
