Step-by-Step Cooking Instructions
Add the salt, black pepper, paprika, and onion powder to a small bowl, and stir to blend the dry seasonings evenly. Rub the spice mixture all over the chicken breasts to coat every side thoroughly.
In a separate medium bowl, whisk together the honey, the initial ¼ cup of Dijon mustard, and the minced garlic until you get a smooth, uniform sauce.
Place the seasoned chicken into a 4-quart slow cooker, then pour the full batch of honey-Dijon sauce over the top of the chicken.
Cover the slow cooker and cook on the Low heat setting for 2 hours 30 minutes. The chicken is ready when it is fork-tender, and an instant-read thermometer inserted into the thickest part of the breast registers 165°F (74°C).
Transfer the cooked whole chicken breasts to a cutting board, then shred the meat completely using two forks. Return the shredded chicken to the slow cooker and toss well to coat every piece in the sauce.
