3 pounds small red new potatoes, halved

Gather all your ingredients first. Preheat your oven to 400 degrees F (200 degrees C), and adjust the oven rack to the lowest position in the oven.
Add the halved potatoes to a large mixing bowl, then toss them thoroughly with olive oil, salt, and pepper. Arrange the potatoes in an even single layer on a rimmed baking sheet (or jelly roll pan), with the cut side of each potato facing down.
