Honey-Glazed Baked Rockfish
This quick, flavor-packed seafood recipe comes together in 30 minutes flat for an easy, satisfying weeknight meal.
Ingredients
4 rockfish fillets (6 ounces / 170g each)
1 tablespoon sesame oil
2 garlic cloves, finely minced
1 tablespoon finely minced fresh ginger
1 tablespoon honey
1/4 teaspoon crushed red pepper flakes
1 tablespoon soy sauce
1 tablespoon fresh lime juice
1/4 cup thinly sliced scallions, cut on the diagonal
Instructions
Preheat your oven to 400 degrees F (200 degrees C). Line a shallow baking pan with aluminum foil, then spray the foil lightly with nonstick cooking spray. Arrange the rockfish filts in a single layer on the prepared pan.
In a small bowl, mix together sesame oil, soy sauce, lime juice, honey, ginger, garlic, and red pepper flakes until fully combined into a smooth glaze. Spoon the mixture evenly over the top of each fillet to coat completely.
Bake in the preheated oven for 10 to 15 minutes, until the fish is opaque and flakes easily when gently prodded with a fork. Sprinkle the sliced scallions over the fillets right before serving.
