Ingredients
1 (13.5-ounce) can full-fat unsweetened coconut milk
⅓ cup granulated white sugar
1 ½ teaspoons pure vanilla extract
⅛ teaspoon fine salt
Instructions
Add the coconut milk, sugar, vanilla extract, and salt to a small mixing bowl. Whisk the mixture continuously until every grain of sugar fully dissolves into the liquid.
Cover the bowl and transfer it to the refrigerator to chill completely. Let the mixture cool for a minimum of 2 hours before moving to the next step.
Pour the chilled base into your ice cream maker, and process it following the manufacturer’s directions for your specific model.
Scoop the churned soft-serve into an airtight, freezer-safe container. Seal tightly and freeze for at least 4 hours to let the ice cream firm up to a scoopable texture. This recipe stays fresh in the freezer for up to 3 months.
