Ingredients
4 tilapia fillets (4 ounces / 113g each)
2 teaspoons butter
½ teaspoon garlic salt, or adjust to your taste preference
¼ teaspoon seafood seasoning (such as Old Bay®), or adjust to your taste preference
1 fresh lemon, thinly sliced
1 (16 ounce / 454g) package frozen mixed vegetables (cauliflower, broccoli, and red bell pepper)
Salt and ground black pepper, to taste
Directions
Preheat your oven to 375 degrees F (190 degrees C), then lightly grease a 9x13-inch baking dish to prevent sticking.
Arrange tilapia fillets in a single layer at the bottom of the prepared baking dish. Dot the tops of the fillets evenly with butter, then season with garlic salt and seafood seasoning.
Top each seasoned fillet with 1 to 2 slices of fresh lemon.
Spread the frozen mixed vegetables around the tilapia fillets, then season the vegetables lightly with salt and pepper. Cover the entire dish tightly with aluminum foil.
Bake in the preheated oven for 25 to 30 minutes, or until vegetables are tender-cooked and the fish flakes easily when tested with a fork.
