  • ΒΎ pound ground beef round

  • 1 teaspoon kosher salt

  • Β½ teaspoon freshly ground black pepper

  • 4 slices American cheese, each cut into 3 even pieces

  • ΒΌ cup mayonnaise

  • 1 tablespoon ketchup

  • 1 teaspoon mustard

  • 1 tablespoon sweet pickle relish

Instructions

  1. Prep your onion and burger patties first: Slice 4 evenly sized, Β½-inch thick rings from the thick center portion of the onion. Set the smaller, uneven end pieces aside to use in another recipe. Divide the ground beef into 4 equal portions, then shape each portion into a very thin patty sized to match your onion rings. Season all patties evenly on both sides with salt and pepper.

  2. Preheat a large skillet over medium-high heat, and cook the burgers in batches to avoid overcrowding the pan. Add 2 onion slices to the pan and let them cook undisturbed for roughly 2 minutes. Place one thin patty on top of each onion, then continue cooking for another 2 to 3 minutes, until the underside of the patties turns deep golden brown. Flip both the onions and burger patties, then keep cooking, pressing gently on the patties as they cook, until the second side is also golden brown.

  3. Top one cooked onion slice with 2 pieces of cut cheese, then stack both cooked beef patties on top of the cheese. Place the second cooked onion slice over the top of the second patty, then press down firmly to hold the full stack together. Flip the whole stacked onion burger and cook for another 1 to 2 minutes, until the cheese is fully melted and the patties are cooked through. Remove the finished burger from the pan, then repeat the cooking process with the remaining onions, patties, and cheese to make the second serving.

  4. While the burgers finish cooking, make your special sauce: Add mayonnaise, ketchup, mustard, and sweet pickle relish to a small bowl, and stir until all ingredients are fully combined. Serve the creamy homemade sauce alongside your warm onion burgers for dipping or spreading.
