Mediterranean Feta Flatbread Recipe
First, preheat your home oven to 425 degrees Fahrenheit (220 degrees Celsius) to get it up to temperature for baking.
Add your olive oil and minced garlic to a small mixing bowl, and stir to fully combine. Use a pastry brush to spread a thin, even layer of this garlic-infused olive oil across the surface of each raw flatbread.
Toss your prepared tomatoes, olives, sliced onion, and pepperoncini into a medium bowl. Drizzle all of the remaining garlic olive oil over the mixture, then gently fold everything together to coat all ingredients evenly.
Spoon the tomato-vegetable mixture evenly over the oiled flatbreads, then sprinkle crumbled feta cheese over the top. Transfer the assembled flatbreads to a clean baking sheet.
Bake the flatbreads in your preheated oven for 12 to 15 minutes, or until the edges of the flatbreads just begin to turn crispy golden brown. Once finished, remove from the oven, sprinkle with freshly chopped oregano, and serve immediately while warm.
