Ingredients

  • 3 cups shredded, pre-cooked chicken

  • 1 cup sour cream, plus extra for serving

  • 8 ounces shredded Cheddar cheese, divided into two portions

  • 12 (6-inch) corn tortillas


Instructions

  1. Adjust your oven racks to sit in the top third and lower third of the oven, then preheat the oven to 450Β°F (235Β°C). Line two large baking sheets with parchment paper, then coat both sheets generously with cooking spray.

  2. In a large mixing bowl, combine the shredded chicken, sour cream, crumbled bacon, sliced scallions, salt, pepper, and Β½ cup of the shredded Cheddar. Stir until all ingredients are evenly incorporated into a uniform filling.

  3. Stack all tortillas and wrap them in a damp paper towel, then microwave on high heat for 30 to 45 seconds, until the tortillas are warm and flexible enough to fold without cracking.

  4. Arrange 6 warmed tortillas on each prepared baking sheet. Spread roughly ΒΌ cup of the chicken filling evenly over one half of each tortilla, then top each portion of filling with the remaining Cheddar (about 2 tablespoons per quesadilla). Fold the empty half of the tortilla over the filling, press gently to seal, then spray the top of each folded quesadilla generously with more cooking spray.

  5. Bake the quesadillas in the preheated oven. Halfway through the bake time, swap the baking sheets between the top and bottom racks to ensure even crisping. Bake for a total of ~16 minutes, until the tortillas are golden and crispy all over.
