Ingredients

  • 1 pound (≈450g) ground chicken

  • ½ teaspoon garlic powder

  • ¾ teaspoon kosher salt (reduce by half if using fine table salt)

  • ¼ teaspoon freshly ground black pepper

  • ½ cup grated Parmesan cheese

  • ½ cup all-purpose flour

  • 1 large egg, beaten

  • 1 cup seasoned breadcrumbs (regular, panko, or a 50/50 blend for extra crunch works well)

  • olive oil cooking spray

  • ¾ cup shredded mozzarella cheese

  • marinara sauce, for serving


Instructions

  1. Add ground chicken, garlic powder, salt, pepper, and Parmesan to a large mixing bowl, and stir until all ingredients are evenly combined. Shape the full mixture into 4 equal large portions, roll each into a tight ball, and place them in the freezer for 10 minutes to firm up (chilling makes shaping much easier later).

  2. While the chicken chills, preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease the paper to prevent sticking.

  3. Remove the chilled chicken balls from the freezer. Coat each ball completely in flour, then press it flat into a thin oval patty roughly ½-inch thick. Arrange all shaped patties on the prepared baking sheet.

  4. Brush the top side of each patty with beaten egg, then sprinkle roughly 1 ½ tablespoons of breadcrumbs evenly over the surface. Press the breadcrumbs down gently to help them adhere to the patty. Give the top a light spritz of olive oil spray, then flip the patties over. Repeat the egg and breadcrumb coating process on the second side, then follow with a generous spritz of cooking spray.

  5. Place the baking sheet in the preheated oven and bake for 8 minutes. Pull the sheet out, flip the patties, and spritz with a little more olive oil. Return to the oven and bake for another 6 to 8 minutes, until the exterior is golden brown and crispy, and the chicken is fully cooked through. For extra deep browning, turn your oven to the broil setting for 1 minute at the end (watch closely to avoid burning).

  6. For a cheesy finish, top each cooked patty with shredded mozzarella, then return to the oven for just 1 minute, until the cheese is melted and bubbly.
