Step-by-Step Instructions
Preheat your oven to 375°F (190°C). Line a standard baking sheet with aluminum foil, then coat the foil evenly with non-stick cooking spray.
Pat all cod fillets completely dry with paper towels, then arrange them in a single layer on the prepared baking sheet. Lightly coat the top of each fillet with olive oil, then sprinkle evenly with Greek seasoning.
In a small mixing bowl, combine the Kalamata olives, chopped artichoke hearts, sun-dried tomatoes, fresh lemon juice, and minced garlic. Stir until evenly mixed, then spoon the mixture evenly over the top of each seasoned cod fillet.
Bake the cod for 14 to 16 minutes, or until the fish flakes easily when gently prodded with a fork. For safe, accurate doneness, confirm the internal temperature of the thickest part of the fillet reaches 145°F (63°C) on an instant-read thermometer.
