Ingredients
1 (30-ounce) bag frozen shredded hash brown potatoes, thawed
1 (12-ounce) bag frozen broccoli florets, thawed
2 cups shredded rotisserie chicken (pre-cooked store-bought chicken cuts down prep time perfectly)
2 cups shredded sharp Cheddar cheese
1 (10.5-ounce) can condensed cream of chicken soup
¾ cup milk (any variety from whole to skim works well here)
½ cup finely chopped onion
½ cup sour cream
1 teaspoon chicken bouillon granules
½ teaspoon ground black pepper
¾ cup crushed buttery round crackers (Ritz crackers are a classic go-to)
¾ cup crushed French-fried onions
3 tablespoons melted butter
Instructions
Preheat your oven to 350 degrees F (175 degrees C), then lightly grease a 9x13-inch baking dish to prevent sticking.
Add all of your base ingredients (hash browns, broccoli, shredded chicken, cheese, condensed soup, milk, chopped onion, sour cream, chicken bouillon, and black pepper) to an extra-large mixing bowl. Stir thoroughly until every ingredient is evenly combined, then spread the mixture smoothly into your prepared baking dish.
In a separate small bowl, mix the crushed crackers and crushed French-fried onions. Pour in the melted butter and toss until all crumbs are evenly coated. Sprinkle this buttery topping evenly across the top of the casserole.
Bake in your preheated oven for 50 to 55 minutes, until the casserole is heated through and the topping turns crispy and golden brown. Let rest 5 minutes before serving, and enjoy warm.
